A restored Dutch-era warehouse around a courtyard, ten minutes’ walk from the Chinese fishing nets.
The Fort Kochi building was a spice godown for most of the last century. We kept the laterite walls and teak beams, opened the roof over the courtyard, and built the kitchen around a coconut-husk fire. The menu is the most seafood-heavy of all our kitchens and changes with the catch at Thoppumpady harbour every morning.
